I en periode holdt de endda juleaften for deres udenlandske ansatte, men nu er der blevet så mange, at det hyggelige ved den tradition er væk. Seneste baby er XO By SushiSushi, som ligger i de tilstødende lokaler til den store restaurant på Strandvejen. Det er også et nyt koncept.
”Det er en kombination af nordisk og japansk. Det er helt nyt og anderledes, hvor vi blander nordiske råvarer ind i det. Der er efterhånden så meget af det andet traditionelle, så det kunne byen godt rumme. Så var det også oplagt, da det her lokale blev ledigt,” fortæller Sinne.
Odense vokser med flere Sushi-restauranter, men de har ikke noget imod konkurrencen. ”Man skal kun være bange for konkurrence, hvis man ikke selv gør det godt nok. Vi kan godt mærke, at vi ikke er alene længere på markedet her i Odense, men det er ikke nødvendigvis en dårlig ting. Det kan åbne øjnene for endnu flere folk for sushi. Det gode ved sushi er, at det er kommet for at blive. Det er ikke bare en forbipasserende trend.” Hverken hun eller han kommer fra iværksætter-familier, så det er ret interessant, hvordan de pludselig er landet med deres eget sushi.
”Både han og jeg kom fra intet. Der var intet i vores familie, der motiverede os til iværksætteri. Men vi har været gode sammen og til at tro på hinanden. Vi har taget nogle chancer, hvor det kunne være landet på sort eller hvid. Det har krævet utroligt hårdt arbejde at nå hertil. Der er ikke noget, der kommer af sig selv, og dem der tror det, de bliver klogere,” lyder afslutningsbemærkningen fra hun. Vi er ret glade for, at sushi-oplevelsen i Odense ikke afskrækkede hende for livet!
