Han er blevet hærdet på den måde, som man nu gør på stjerne restauranterne i København, hvor så mange ambitiøse kokke vil gøre hvad som helst for at få foden inden for.
”Jeg kan huske, at jeg kom fra sushi i Odense over til sushi i København, og tænkte, at det var min hjemmebane med asiatisk inspireret mad. Umami var jo lidt det hotte sted i København, så jeg var overbevist om, at de havde ramt plet med mig. Men det endte med, at køkkenchefen på Umami spurgte mig, om jeg godt nok havde været assisterende køkkenchef på sushi.”
